kathy thank you for the instructions pounds, inches.  I'm going to look for that apple day.  I may be there now, my second day with almost no loss.

Hello,
It's been a while since I've wrote in the forum, but I've been following all the posts.
Does anyone know if you can have jalapeno peppers on phase 2?  I like to eat at least 1-2 a day. Fresh is best I know, but I do like the jared kind in which I drain all the juice out of the jar than put in the fridge and when I eat, I drain out whatever liquid is left between a couple paper towels and press until the poor pepper looks like it was run over by a bus.  Smiley
I just started phase 2 for the second time last Sat.  and so far, lost about 10lbs.  However, I've already hit a plateau 3 days ago.  I guess it's because I only have about 10lb left to loose. I did apple day yesterday, but only lost about .5lbs.  I'm not giving up.
Also, for those that are eating miracle noodles on phase 2 how big of a portion are you eating and how are your results with weight loss? 
I appreciate your thoughts.

Well.... Dr. Simeons specifically mentions peppers and pears as items that although lower in calories are not allowed. See page 24 of Pounds and Inches. That being said, nowadays we know alot more about how beneficial a hot pepper is to your metabolism; and I would say that if you really need them, go ahead with it, but weigh them and count the calories. Try to stick with the fresh ones too.

You could jar your own in apple cider vinegar. This is how my mother-in-law makes vegetable pickles: Just wash and dry the peppers (or vegetables that you like) well. Prick the peppers several times with a fork and put in a container and cover with apple cider vinegar. If you use pearl onions cut a cross in the bottom of each one. Sprinkle with pickling spices, sea salt and pepper, then cover with a towel and let sit for three days. Transfer to a clean jar and make sure it's filled to the top with vinegar and sprinkle more salt and pepper on top. Putting a sprig of cleaned and dry fresh tarragon in each jar first is a nice touch. Close the jar (wipe the rim and threads if you slop some vinegar on it before closing) and leave exposed to light for about a month. Then open each jar and top off with some extra vinegar. Then reclose each jar and you may put them away and use as needed.

Thanks for the response Kathy.  I went ahead and had 1 fresh jalapeno pepper today so we'll see what tomorrow brings.  The jarring of fresh peppers with apple cider sounds fantastic, I will try that. Smiley
