A great trick is to make "pretend pasta" with long strips of zucchini. Use a mandoline grating tool to achieve super long pasta like strips. Then curl them up in a steamer to cook. You can make a really great fat free sauce with chopped tomato, onion,garlic and spices simmered in a little chicken broth. You can even put your ground meat, or cut up pieces of chicken in with the sauce.

Apple Pie Ingredients: 1 - Apple 1/4 tsp - organic cinnamon dash - stevia Cut apple into slices (pie style) remove the core and seeds but don't peel. Arrange in a serving size pyrex or ceramic bowl. Sprinkle with cinnamon & stevia. Put it in hot oven. depends on your oven, maybe 20 minutes or so.

Simeon's Soda
1 cup brewed tea (of choice), 1 to 2 cups of ice cubes, 1 straw (preferable), 2 packets of non bitter stevia powder (nu-naturals), or a few drops of flavored stevia liquid 1 - 1 1/2 Cup Mineral Water
Brew the tea, add ice cubes to a large cup, sprinkle stevia over the ice, add tea (ice melts less if you wait a little after brewing), fill up the rest of the cup with minteral water, mix and enjoy!!

Cabbage Rice
Cabbage rice to be used as a side dish with any protein entree
Ingredients:
Cabbage, salt, pepper, various spices
Chop cabbage finely into a rice or noodle texture, add spices and steam or lightly boil for 3-4 minutes. Strain off excess liquid and have fun with it.
Examples:
Mexican style - cayenne, oregano, tomatos if you mix veggies, salt &peper.
Oriental - ginger, lemon, salt and pepper.
Italian - fresh basil, parsley, oregano, tomato.

Strawberry Vinagrette
Ingredients:
Fresh strawberries, apple cider vinegar, stevia (to taste), pepper (to taste)
Puree strawberries, vinegar, stevia, pepper.
Also makes a great marinade or sauce for entrees.

Strawberry popsicles  Ingredients: Fresh strawberries, lemon juice, stevia, fresh mint optional puree ingredients and pour into pop molds or cups. Freeze until firm. Enjoy

Crab Cakes
100 grams cooked crab meat (divided into 2 - 50g patties) drain all extra water. Salt, cayene, lemon, 1 Tbs apple cider vinegar, garlic powder, chopped onion, parsley
Mash up crab finely and add liberal lemon juice, vinegar, garlic, onion and cayenne, mix well and serve cold on top of green salad with lemon wedge or form into patties and fry (in water or lemon juice) until hot and lightly browned. Garnish with lemon.
**For phase 1,3,4 add 1 Tbs of organic mayo or greek yogurt

Fat Free Mango Dressing
1 ripe mango (peeled and stoned) juice of one orange or one lemon (if lemon add a packet of stevia) 1/2 t curry powder 1 clove garlic water to extend
Blend in the blender.

YERBE MATE TEA I READ ISNT SUPPOSED TO GET TOO HOT. ONE CUP OR 1.5 CUP YERBE MATE TEA 3OR 4 DROPS VANILLA ONE PACKET NON BITTER STEVIA VANILLA SOY MILK TO TASTE. LIKE FOR \A REGULAR TEA OR LIGHT COFFEE. CINNAMON TO TASTE.
I LOVE DRINKING IT THIS WAY. I HAVE ADDED SOYMILK (VANILLA TO CAMOMILE TOO AND ITS GOOD)
INSTEAD OF HOT CIDER TRY THIS FOR THE HOLIDAYS: * CAMOMILLE IS ALSO SAID TO TASTE LIKE APPLES A BIT SO I ADD CINNAMON AND STEVIA AND IT'S AWSOME. i MAY ADD A LITTLE HOT CIDER SOMETIME..I'LL LET YOU KNOW.

PLAIN NON FAT SUGAR FREE YOGURT ONE HALF TEASPOON VANILLA 3 SHAKES CINNAMON FROZEN AND THEN FINE CUT STRAWBERRIES (ABOUT ONE CUP YOGURT TO HALF CUP STRAWBERRIES ADD SOME ) ONE HALF CUP WHOLE GRAIN OATES (I'VE EVEN USED CHEERIOS IN A PINCH AND THEY'RE GOOD)

Shrimp Soup
Start with 3/4 cup of chicken or vegetable broth. Saute 1/2 of a large onion in the broth until translucent and tender. Add a sliced clove of garlic and an equal amount of ginger. Then add 1/4 cup of lemon juice, a handful of baby bok choy (or spinach) and a handful of chopped cilantro. Add more broth until you have the liquid ratio you like for your soup and bring it all to a boil then add your shrimp.

Beef Curry
1/2 large onion sliced very thinly beef broth 1 clove of garlic 3.5 oz beef diced into tiny bits turmeric curry powder 1 packet of non bitter stevia sea salt
Saute onion in beef broth until very tender, add sliced clove of garlic and meat cook until meat is done add more broth to cover. Add enough turmeric and curry powder to taste --approx. 1/4 to 1/2 teaspoon of each. Cook to reduce the liquid and add stevia packet and salt to taste. Serve over miracle noodles or cabbage.
